At this point, we've made homemade pasta a handful of times. The recipe linked above is the one I've been defaulting to lately. It makes just shy of one pound of pasta dough, enough for two nights of pasta dinner for me and Jackson. A few general notes about homemade pasta:
- 4 oz pasta dough per person is a good serving amount
- Don't be too hasty rolling out the pasta dough and putting it through the press - this can reduce how much it elongates and make it irregularly shaped.
- I basically always use the fettucine shape. I see no need to make pasta as thin as spaghetti, but maybe I will change my mind about this down the line.
- In the future, record a good salt / water ratio and cook time for homemade pasta.

- We did not finish cooking the pasta in the sauce.
- We left the lid uncovered to let the sauce reduce
