Ingredients:
- 1 tablespoon coarse-ground mustard
- 1 tablespoon smooth mustard
- 3 tablespoons white balsamic or sherry vinegar
- 1 garlic clove, minced
- 1 tablespoon / 21 grams honey
- salt and pepper to taste
- 1/3 cup olive oil
Combine all ingredients except the oil in a heavy-bottomed bowl and whisk together. Whisking all the while, slowly stream in oil. Whisk the entire time so that the oil and vinegar emulsify, forming a creamy dressing. Taste and adjust seasoning. Store at room temperature.
