I like to use this dressing for coleslaw, but it also goes great on salads more generally.
Ingredients
Puree all of the ingredient except for the avocado oil together with a blender. You can also use a whisk, just take extra time in that case to break down the chunks of miso. With the blender running, stream in avocado oil until the mixture almost doubles in volume, so that mixture is just under 50% avocado oil, but I always eyeball this. If you prefer sticking to a measurement, start with the 1/2 cup listed above. Taste and adjust seasoning as needed.
