Made these cookies for a dinner with the extended on the Thursday before my wedding. As the photo shows, they look beautiful. Nonetheless, I was disappointed by them. they didn't have the ultra-buttery flavor that's characteristic of shortbread. And while the chocolate dip looks nice, it results in half the cookie having way too much chocolate and the other half having none at all. I would have preferred if the chocolate were drizzled over the entire cookie to make its distribution more even.
There is a chocolate and pistachio shortbread cookie on America's test kitchen that I may try instead of this one in the future.
