Preheat oven to 300 degrees. Toss nuts with a splash of water, lots of salt and pepper, and one or two other spices of your choosing. (A favorite of mine for this is allspice.) Taste the nuts and adjust the seasoning as needed. They should taste intensely seasoned and salty. Lay out in a single layer on a sheet pan and roast for 30 minutes. Allow to cool before storing in an air-tight container.
