Plant Based RD

My friend Kenda recently recommended the cooking blog Plant Based RD, and what a recommendation it was! Catherine, the writer of Plant Based RD, offers vibrant vegan recipes, filled with a variety of plants, nutrients, and flavors. Along the way, she shares valuable insights into the technical details of cooking and nutrition. Food science is totally my jam, so I am all over these scientific segues. And to top it all off, this spinach artichoke soup recipe of hers is fabulous! Jackson and I both really liked it. The only thing I did differently from the recipe was use chicken broth and parmesan in place of vegetable broth and nutritional yeast. I didn't have either of the latter two on hand and, at the end of the day, I am not vegan. Sorry, Catherine. Besides that, I followed the recipe as written and wouldn't change a think about it.
