We burnt the absolute crap out of the peanut sauce, but the chicken came out great. We both really liked the marinade. If we make it again on the stove, we'll probably skip the skewers. Kebabs makes sense on a grill, but not so much on the stove, where frying up the meat, as one would a stir fry, delivers a faster and more even cook. It was a bummer that we ruined the peanut sauce, but tbh I'm not sure the chicken needed it. It was succulent and flavorful on its own because of the marinade.
We had this with crispy eggplant salad, and the two dishes paired beautifully. I highly recommend this combo for a delicious home-cooked Thai dinner.
